For Mama's Day, I made Pumpkin Crunch to share with my family. I got the recipe from my friend Cheryl U. So, Thanks Cheryl! I'm happy to share this with the rest of ya (especially you, Maria!!!).
Here we go....
Ingredients:
1 Lg Can Pumpkin
1 Can Evaporated Milk
1 Cup Sugar
3 Eggs, slightly beaten
1/4 Teaspoon Cinnamon
1 Box Yellow Cake Mix
1 Cup Chopped Macadamia Nuts (opt)
2 Blocks Melted Butter
Frosting:
1 Pkg (8 oz) Cream Cheese
3/4 Cup Cool Whip
1/2 Cup Powdered Sugar
To Do: Line a 9x13x2 pan with wax paper. Mix Pumpkin, evaporated milk, sugar, eggs, and cinnmon together and pour into pan. Pour 1 box cake mix (dry) over pumpkin mixture and pat nuts on cake mix. Spoon melted butter over nuts evenly. Bake 50-60 minutes at 350 degrees. Invert and peel off waxed paper when slightly cooled. Mix frosting ingredients together and frost cake when slightly warm to spread evenly. Refrigerate (over night or for 4-6 hours). Enjoy!!!
